Masterchef Pankaj Bhadouria’s Secret To Making Soft, Fluffy Kulchas Without A Tandoor

New Delhi: If you find yourself craving the hot, fluffy, and perfectly crisp kulchas served at dhabas and restaurants but are held back by the lack of a tandoor at home, there is no need to worry. Renowned culinary expert Masterchef Pankaj Bhadouria has shared a brilliant cooking hack that allows you to prepare authentic, restaurant-style aloo-paneer kulchas right in your kitchen, using just a regular flat pan (tawa) and a clever water trick.

The secret to recreating that signature tandoori texture lies in creating a steam-rich environment. To begin, you will need to prepare a soft dough. Combine one and a half cups of refined flour (maida) or whole wheat flour with four tablespoons of curd, a teaspoon of baking powder, and half a teaspoon of salt. Gradually add water to knead a soft dough, incorporating two tablespoons of oil at the end. Allow the dough to rest and set for about an hour.

While the dough rests, prepare the flavorful filling. Finely chop two onions, mix them with a pinch of salt, and let them sit for 10 minutes before squeezing out the excess water. In a mixing bowl, mash two large boiled potatoes and add 100 grams of grated paneer. Combine this with the squeezed onions, a tablespoon each of chopped ginger and garlic, fresh coriander, ajwain (carom seeds), red chilli flakes, and salt to taste.

Once the dough is ready, divide it and the stuffing into six equal portions. Stuff each dough ball with the potato-paneer mixture and seal it. Roll them out gently into an oval shape. The crucial step is to lightly brush the top surface of the rolled kulcha with water and press some nigella seeds (kalonji) and dried fenugreek leaves (kasuri methi) onto it.

To cook, heat a tawa on the stove. Pour about a quarter cup of water directly onto the hot pan and immediately place the kulcha over it, wet side down. Quickly cover the tawa with a lid to trap the steam. This unique steaming method puffs up the kulcha beautifully, giving it a soft, airy interior. Once the bottom turns golden brown, flip the kulcha and cook the other side. For that authentic, crispy tandoori finish, remove it from the pan and roast it directly over an open flame for 30 to 35 seconds.

Generously apply ghee or butter and serve these piping hot kulchas with spicy chole, fresh butter, or your favourite pickle.
